  • 1 whole pheasant
  • A handful of fresh herbs (e.g., rosemary, thyme, and sage)
  • 4 tablespoons of butter
  • 1/2 cup of white wine
  • Salt and pepper to taste


  1. Preheat your oven to 350°F (175°C).
  2. Season the pheasant generously with salt and pepper, both inside and out.
  3. Stuff the pheasant's cavity with a mix of fresh herbs.
  4. In a large ovenproof skillet, melt the butter over medium heat.
  5. Place the pheasant in the skillet, breast-side down, and sear until it's golden brown.
  6. Flip the pheasant over and pour in the white wine.
  7. Transfer the skillet to the preheated oven and roast for about 45-50 minutes, or until the pheasant is cooked through.
  8. Baste the pheasant with the pan juices every 15 minutes.
  9. Once done, remove the pheasant from the oven and let it rest for 10 minutes.
  10. Carve the pheasant, drizzle with the pan juices, and serve with a side of roasted vegetables or a light salad.
